I would not worry too much about what you will get paid, it will be a long way to this point anyway, and if this is your main objective/consideration right from the outset, then "Good luck".
As for the Formula Ford gig, is a two sided sword/coin.
Coming out of karts, you where racing without aerodynamics and without any form of tunable suspension (dampers, springs etc.). I know, that you tune chassis stiffness in Karts, but I think you will know what I mean.
Formula Ford offers you the option, to learn a lot about "mechanical grip" and chassis tuning, what a roll center change or damper change will feel like from behind the wheel, and what it does to the handling of the car.
After you have mastered this, you can go FR GP3, F3 o some other series which involves aerodynamic and wings etc.
I don't thing, a season or two Formula Ford will hurt you, can learn to properly shift as well.
Now, it's maybe easier to find sponsors for a "car with wings", because they look cooler, that was a reason behind Formula BMW etc, but you will facing a steeper learning curve, trying to get your head around mechanical and aerodynamic setups.
