Why not use the Aston Martin Valkyrie?
This would assume that Mercedes do not intend to renew their SC contract.

I'd be very surprised if they could get all the timing/control equipment in the cockpit of valkyrie, never mind all the black boxes that live in the boot of the current SC - see section starting about 5:00 here

Your opinions?
Obviously it should be the Mercedes-AMG C63 S E-Performance to show why four-cylinder hyrbid 2.2 tonne performance sedans are (the) best (or nothing). :)

Did you know the C63S weighs 5kg more than a Mercedes X250d 4MATIC pickup truck? Quite the fun fact.

You couldn't.
This is the Valkyrie's storage compartment, filled with one can of fix-a-flat and a tyre inflator.

Since there's no storage space in the interior, the first-aid-kit had to be stowed behind the front number plate.

A Safety Car also needs bulletproof reliability, which would rule out most exotic hypercars and definitely the Valkyrie. And the 50 L fuel tank might also be an issue for a car that uses 45.7 L / 100 km (WLTP low, more on track).

The obvious answer is the GMA T.50.

Properly designed, useable hypercar that, with active aero, will provide the performance required.

Oh, and it sounds amazing.

Nice car. Still looks a bit like an old McL F1 in the front and like a Ferrari 458 in the back. Plus the fan...
