In overtake mode battery cuts completely at 355 km/h, but if you arrive with a lot of momentum and in close slipstream then apparently you can gain an extra 5 km/h with ICE power alone.
Unless this 355 km/h mgu-k limit is lifted then I don't think much higher than 360 kmh is possible.

Momentum does not work like that. If your power cuts off at 355 momentum will not push you further than 355, the acceleration would cease. You would reach "terminal" speed if your drag exceeded force generated by the engine.

The fact that these cars can accelerate above 355 on ICE power means that they are super low drag, which is not unexpected as they know they have cornering modes when they want to corner.

If any car is still accelerating at a decent rate, acceleration doesn't just instantaneously stop. The accelerations will slow, and then the car will slow.

for example get on a highway, floor it, and then let off the gas. unless you are driving an aerodynamic brick or an econo box you will likely see the speed still increase a little before it starts to decrease.
