What are the rules about this? It seems that you could set 5 maps (hard left, left, neutral, right, hard right) and just toggle between them like up/downshifts.

What limits this type of control?

Officially there are hardly any rules regarding the differential.
9.10 Torque transfer systems
9.10.1 Any system or device the effect of which is capable of transferring or diverting torque from a
slower to a faster rotating wheel is not permitted.
That's pretty much what you can find in the 2022 technical regulations. So no torque vectoring, That's it.

As far as i know, most teams use 2 adjustor knobs on the steering wheel to set the amount of slip the diff allows between the wheels for corner entry and apex. There's no need for maps for a specific corner direction. The diff doesn't care if its a lefthand or righthand corner. Its job is to allow different wheel speeds up to a certain amount and that's what you can adjust.

There are only three inputs allowed: acceleration-g, deceleration-g and road speed. No lateral-g or steering angle inputs are allowed.
This allows the teams to map the diff for: corner entry, mid corner, corner exit and high speed.
Only the entry, mid and hi speed tend to be adjustable easily on the wheel.
