It makes the wheel lighter to turn, hence reducing stress on the driver in the race.
Don't they have power assisted wheels? It is their thing and their unique feature, while majority of others use Mclaren steering wheels. I doubt the driver preference is involved, but if it was me, and I had a choice, I would find it far more convenient having a display where it was last time I looked rather than upside down.
