WB, it all depends on what type of a sponsor you are... if you are a technical partner (e.g. Shell/Ferrari) you can be sure that all the fluids will be supplied by the technical partner. However, this does require a degree of openness between the team and the sponsor. When I worked with Shell they had the Ferrari engines in the lab well ahead of the next season developing fuels and lubes for the various track types.
If you simply purchase ad space you put your sticker on the car and it's up to the team to decide what goes into the fuel tank. The only exception to this would be if the engine supply deal required the use of specific fluids/lubes.
It is also feasible that other fluids (hydraulic, coolant, greases, etc) might be part of a separate technology sponsorship/partnership.
